
Pumpkin Chocolate Chip Muffins

INGREDIENTS
• 1 1/2 cup flour
• 1/2 tsp salt
• 1 cup sugar
• 1 tsp baking SODA
• 1 cup pumpkin purée (NOT pumpkin pie filling)
• 1/3 cup (10 Tbsp) melted butter
• 2 eggs, beaten
• 1/4 cup water
• 1/2 tsp nutmeg
• 1/2 tsp allspice
• 1/2 tsp cinnamon
• 1 tsp ground ginger
• 1 cup milk or dark chocolate chips
• 1 cup chopped walnuts (optional)

PREPARATION STEPS
1. Preheat oven to 350 degrees.
1. Preheat oven to 350 degrees.
2. In a medium bowl, sift together flour, salt, sugar, & baking soda.
3. In a separate bowl, mix pumpkin, melted butter, eggs, 1/4 cup water, & spices together.
4. Combine dry ingredients with pumpkin mixture a little at a time until well incorporated, but don’t over-mix.
5. Fold in chocolate chips & nuts.
6. Spoon mixture into a greased muffin pan (or use muffin cups).
7. Bake for 25-30 min. (Mine are usually done at 25 min.)
